Tournedos Rossini recipe and preparation method

Tournedos Rossini is a classic French dish that features filet mignon, foie gras, truffles, and a rich Madeira sauce. Here’s a simple recipe and preparation method for Tournedos Rossini:

 

Ingredients:

  • 4 filet mignon steaks
  • Salt and pepper
  • 4 slices of foie gras
  • 4 slices of brioche or toasted bread
  • Truffle slices (optional)
  • 1 cup Madeira wine
  • 1 cup beef stock
  • 2 tablespoons butter
  • 1 tablespoon olive oil –
  • Fresh thyme and rosemary for garnish

Instructions:

Season the filet mignon steaks with salt and pepper on both sides.
Heat a skillet over medium-high heat and add the olive oil. Sear the steaks for 3-4 minutes on each side for medium-rare, or to your desired level of doneness. Remove the steaks from the skillet and keep warm.

In the same skillet, add the foie gras slices and sear for 1-2 minutes on each side until golden brown. Remove from the skillet and keep warm.

Toast the brioche slices or bread in the skillet until golden and crispy.

In a saucepan, combine the Madeira wine and beef stock. Simmer over medium heat until the liquid is reduced by half, stirring occasionally.

Whisk in the butter to create a rich, glossy sauce. Season with salt and pepper to taste.

To assemble, place a slice of toasted brioche on each plate, followed by a filet mignon steak, a slice of foie gras, and truffle slices if using. Drizzle the Madeira sauce over the top and garnish with fresh thyme and rosemary

 

 

Serve the Tournedos Rossini immediately while hot. This decadent dish pairs well with a side of sautéed vegetables or a simple green salad. Enjoy
